The physical interpretation of the culinary triangle. Temperature changes the structure (symbolically drawn as lattice) physically: polysaccharides and corresponding cell structures become softer, proteins denature. Microbiology changes the structure by destroying certain structural elements. Long cooking implies hydrolysis of certain structural polymers, too.
